Ingredients:
- Beef 1kg: diced to 2 cm cubes
For marination:
- Garlic paste: 1tb sp
- Ginger paste: 1 tb sp
- Turmeric powder: ½ tb sp
- Cayenne pepper or Paprika powder: ½ tb sp
- Cumin powder: ½ tb sp
- Coriander powder: ½ tb sp
For frying:
- Onion: 2 medium, finely chopped
- Oil: 1 tbs
- Salt: to taste/ 1/2 tbs
- Bay leaf: 4
- Whole garam masala i.e. cardamom pods, clove, and cinnamon stick: 5 each, dry toasted and crushed using spice grinder/coffee grinder/mortar and pestle
- green chilli: 3
- Freshly milled black pepper: acc to taste
To add later:

- carom seeds (ajwain): 1/4 tsp
- fennel seeds:1/4 tsp
- celery seeds:1/4 tsp
- crispy fried onion: 1 tbs
Method:
- marinate beef with above ingredients and leave for 1-2 hours
- In a non stick saucepan heat oil to medium
- through in the bay leaves and onion when oil is hot
- stir occasionally until onion is soft.
- add the the beef and continue to stir.
- reduce the heat and cover with the lid
- stir occasionally to make sure beef is not sticking to the bottom.
- add crushed garam masala, green chillies and black pepper halfway through the cooking.
- avoid adding water unless beef becomes too dry and starts to stick to the bottom in which case add 1 tbs water and lower the heat.
- in a separate hot frying pan dry toast fennel seed, carom seed and celery seeds for less than one minute until they release aroma.
- mix and grind the seeds and add to the beef towards the end of the cooking once water dries out.
- garnish with the fried onion
